This recipe can be made with or without the noodles. I planned on making it over white rice, but found out half way through that I only had a half of a cup of rice left. Not wanting to go to the store, I foraged around the kitchen and found some spaghetti noodles. According to Rachel Ray, these noodles work just fine as a substitute for more authentic ones, and I tend to agree. <br />
You'll need:<br />
<ul style="text-align: left;">
<li>Spaghetti Noodles or Rice (optional)</li>
<li>4 tbsp soy sauce, plus a little extra as needed</li>
<li>2 tbsp brown sugar</li>
<li>4 tsp garlic powder</li>
<li>4 tsp peanut butter</li>
<li>Olive oil</li>
<li>1 (16 oz) package frozen stir fry vegetables</li>
</ul>

Directions:<br />
<ol style="text-align: left;">
<li>Cook your noodles or rice until al dente (or whatever you call rice when it's done).</li>
<li>Meanwhile, stir your soy sauce, brown sugar, garlic powder, and peanut butter in a small bowl.</li>
<li>Warm up your oil in a large frying pan or wok, then stir fry your frozen veggies 5-7 minutes.</li>
<li>When veggies are done, mix in about half of your soy sauce mixture into the veggies.</li>
<li>Add your noodles/rice, then pour in the rest of the sauce. Stir well.</li>
<li>Feel free to add an extra splash or two of soy sauce to your liking, then dig in!</li>

<li>1/4 cup grated parmesan cheese</li>
<li>1/2 teaspoon seasoning salt (I made my own)</li>

1. Preheat oven to 425°F. In a small bowl, mix together the oregano, rosemary, cumin and salt. Lay the chicken wings on a baking sheet and season the chicken wings with this mixture.</div>

2. Bake the chicken wings for 50 minutes, turning turning them over after 30 minutes. While the chicken is baking, mix together the oil, fresh basil, garlic, parmesan cheese and seasoning salt.</div>

4. When the chicken is cooked through, toss the wings with the garlic/cheese/olive oil (or butter) sauce. Serve with the blue cheese/mustard dressing.</div>

So, I went to a small work luncheon yesterday, and my supervisor made these amazing peanut butter bars. My mouth about melted off when I tried them, so I found the recipe on Pinterest, and had to repost it here. Ingredients</div>
<ul style="text-align: left;">
<li>1 cup butter melted</li>
<li>2 cups graham cracker crumbs (use the boxed kind, or grind them in a food processor. Tiny granules.)</li>
<li>2 cups confectioners’ sugar</li>
<li>1 cup + 4 tablespoons peanut butter</li>
<li>1 1/2 cups semisweet chocolate chips</li>
</ul>

<li>In a medium bowl, mix together the melted butter, graham cracker crumbs, confectioners’ sugar, and 1 cup peanut butter until well blended. </li>
<li>Press evenly into the bottom of an ungreased 9×13 inch pan. </li>
<li>In a metal bowl over simmering water, or in the microwave, melt the chocolate chips with the peanut butter, stirring occasionally until smooth. </li>
<li>Spread over the peanut butter layer. Refrigerate for at least one hour before cutting into squares.</li>

As I was putting together my work lunch this morning, I thought--hey, I make this salad all the time... How come I haven't posted it yet? It's so easy, it only uses 3 ingredients (plus whatever dressing you like). I can put it together in minutes, it's delicious, and it's cheap! Make in whatever portion size you like... These directions are for a single serving, but you could easily increase it for a party or potluck.<br />
<br />
Ingredients:<br />
<ul>
<li>Spring Mix luttuce</li>
<li>Crumbed Feta cheese</li>
<li>Dried cranberries</li>
<li>Salad dressing (I like to use Italian dressing)</li>
</ul>
Directions:<br />
<ol>
<li>Grab a large handful of lettuce, and place in a bowl.</li>
<li>Top with 1 1/2 tbsp feta and 1 tbsp cranberries (I usually eyeball this to however much I like).</li>
<li>If you're taking it to work, keep the dressing in a separate container until you're ready to eat.</li>

<li><span style="line-height: 24px;">Preheat oven to 300 F</span></li>
<li><span style="line-height: 24px;">Wash the kale thoroughly under lukewarm water, then drain and pat dry with a towel.</span></li>
<li><span style="line-height: 24px;">Pull pieces of the kale leaves off into potato chip-sized pieces, leaving out the stem.</span></li>
<li><span style="line-height: 24px;">Place the kale in a big bowl and pour in the olive oil. Stir with your hands until all of the kale is entirely coated.</span></li>
<li><span style="line-height: 24px;">Season to taste with the sea salt and pepper, then add the lemon juice. Mix this with your hands too, but be careful if you have a cut on your hands-- I learned that the hard way!</span></li>
<li><span style="line-height: 24px;">Place the kale in a single layer on a big baking sheet (you may need 2) and place in the oven for about 35 minutes, or until crispy. You may want to toss the chips every 10 minutes or so to make sure they all cook evenly.</span></li>
<li><span style="line-height: 24px;">Sprinkle extra sea salt if desired, then consume. :)</span></li>

My very best friend from 3rd grade just sent me this amazing recipe for Shephard's Pie... Thank god someone has time to cook, because it feels like a lifetime since I made a decent meal! I'm making this tonight!<br />

<li>1 can green beans</li>
<li>1/2 cup frozen peas</li>
<li>2 packs instant potatoes (8 servings) (I use Idohoan Instant Flavored Potatoes, but fresh works too)</li>
<li>1 can cream of mushroom soup (could be substituted with cream if chicken or 2 packs of instant gravy mix)</li>
<li>1/2 cup sour cream (optional)</li>
<li>2 T cream cheese ( optional) </li>
<li>Cheese</li>
<li>1 cup of milk </li>

<li>Evenly spread peas over meat. </li>
<li>Drain beans and evenly spread over meat. </li>
<li>Cook instant potatoes; after cooked, add sour cream and cream cheese. </li>
<li>Spread potatoes over meat and veggie mixture. </li>
<li>Cover in cheese and cook at 350 till edgest start to bubble ( about 20 min). </li>

That's what I thought when I whipped up this little baby after dinner tonight. It's the perfect way to get rid of that old bottle of UV Blue you've had in your fridge after the last party you had.<br />

I was at a loss as to what I should make for dinner last night, and being on a tight budget, I had to use what was on hand. This simple recipe only calls for a few ingredients, so it's a great weeknight meal to use. I've found it makes a great chicken to use with pasta dishes, too! Ingredients:<br />

<li>2 tsp crushed garlic (about 5 cloves)</li>
<li>1/4 cup olive oil</li>
<li>1/4 cup dry bread crumbs</li>
<li>1/4 cup parmesan cheese (the crumbly kind you get in from the green can)</li>
<li>4 small skinless, boneless chicken breast halves</li>
</ul>
Directions:<br />
<ol>
<li>Heat your oven to 425º F (220º C)</li>
<li>Warm the garlic and olive oil in a pan until warm, in order to mesh the flavors together</li>
<li>In a separate dish, combine the bread crumbs and parmesan.</li>
<li>Dip the chicken into the garlic/oil mixture, then dip both sides of the chicken into the bread crumb mixture so it is completely covered.</li>
<li>Place in a shallow baking dish and bake for 30-35 minutes, or until no longer pink and juices run clear.</li>

<li>Add another layer of crackers.</li>
<li>For frosting, combine fudge topping ingredients, beat until creamy. </li>

Ingredients</div>

<li>12 ounces whole wheat penne</li>
<li>1 tablespoon olive oil</li>
<li>4 cloves garlic, minced</li>
<li>1 pinch crushed red pepper flakes</li>
<li>2 medium tomatoes (about 1/2 lb.) chopped</li>
<li>Salt and pepper, to taste</li>
<li>4 cups fresh spinach</li>
<li>10 ounces medium raw shrimp, peeled and deveined</li>
<li>1/2 cup marinara sauce</li>
<li>1/3 cup 0% plain Greek yogurt</li>
<li>1/4 cup grated parmesan cheese</li>
</ul>

<li>Cook penne until al dente. Drain and set aside.</li>
<li>In a large skillet with a lid, heat olive oil over medium-low heat. Add in garlic and red pepper flakes, cook for 2 minutes or until garlic begins to soften.</li>
<li>Add in tomatoes, salt and pepper. Cook for 5 minutes.</li>
<li>Turn heat up to medium-high and add in shrimp. Cook for 1-2 minutes, or until shrimp are pink and opaque. Remove from heat, add in spinach and cover skillet. Let spinach wilt for 2 minutes, stirring occasionally.</li>
<li>Remove lid and place skillet back over low heat. Add the penne, Greek yogurt and pasta sauce. Stir until sauce is mixed well and all pasta and veggies are coated. Heat until just warmed through. Divide into pasta bowls and serve topped with parmesan cheese.</li>

It's 95 degrees here in Illinois today, and I needed something cool and refreshing to cancel out the hot weather. This mango salsa was the perfect addition to my poolside snacks. Super easy, and VERY healthy--you can't go wrong. <br />

Ingredients: (Makes about 4 cups)<br />

<li>4 mangoes, peeled, seeded and chopped</li>
<li>1 cup chopped red bell pepper</li>
<li>4 green onions</li>
<li>8 tbsp fresh cilantro</li>
<li>2 tbsp lime juice</li>
<li>1 tbsp lemon juice</li>
<li>2 pinches salt (optional)</li>
</ul>

<li>Mix all ingredients together. You can put it into a blender or food processor, or keep it nice and chunky if you like.</li>

So I'll admit it-- I hate tomatoes. I pick them out of everything. But I can handle bruschetta, so when I found this recipe on Pinterest, I thought--it's so easy and cheap, why not?<br />
Boy, was I glad that I did. The husband couldn't stop raving about it, and it really didn't take long to prepare at all! The best part is, it's only five ingredients. It's the perfect solution for the weeknight meal.<br />

Ingredients:<br />
<ul style="text-align: left;">
<li>4 small boneless skinless chicken breast halves, pounded to 1/2 inch thick</li>
<li>1/2 cup KRAFT Sun-Dried Tomato dressing, divided</li>
<li>2 tomatoes, finely chopped</li>
<li>1/2 cup shredded mozzarella cheese</li>
<li>1/4 cup chopped fresh basil or 1 tsp. dried basil leaves</li>
</ul>

Directions:</div>

<li>Place your chicken into a large ziploc bag along with the dressing and allow to soak for at least 10 minutes (I started mine in the morning and let it sit all day) in the fridge.</li>
<li>Preheat your oven to 425º F.</li>
<li>Combine the tomatoes, cheese, and basil into a large bowl.</li>
<li>Bake your chicken until almost cooked through (about 25-30 minutes).</li>
<li>Spoon large amounts of your tomato mixture on top of the chicken, and put back in the oven until the cheese has melted through, and your chicken is completely cooked (about 5-8 minutes).</li>

I can't believe it's taken me this long to post a good recipe for mostaccioli! This one is layered like lasagna in all the good ways, but takes a lot less time and effort than lasagna with the same mouth-watering effects later. The original recipe was taken from <a href="http://www.food.com/recipe/oven-baked-mostaccioli-162545">Donna S.</a> over at Food.Com but I've made a couple small changes to give it some extra flavor. Makes a 9x13inch pan.<br />
<br />
Ingredients<br />
<ul>
<li>1 lb ground turkey (or beef)</li>
<li>1 onion, diced</li>
<li>1 32oz jar spaghetti sauce</li>
<li>1 8oz can tomato sauce</li>
<li>1 cup water</li>
<li>16oz mostaccioli pasta, cooked, drained and tossed with</li>
<ul>
<li>2 tsp veggie oil</li>
</ul>
<li>16oz mozzarella cheese</li>
<li>1/2 cup parmesan cheese</li>
<li>1/4 tsp garlic salt</li>
<li>1/4 tsp garlic powder</li>
<li>Pinch of fennel (optional)</li>
<li>1/4 tsp italian seasoning</li>
<li>Salt</li>
<li>Pepper</li>
</ul>
Directions:<br />
<ol>
<li>Preheat the oven to 350°F</li>
<li>Cook turkey (or beef) with onion until brown</li>
<li>Stir in spaghetti sauce, tomato sauce, and water. Sauce will be watery! This is okay!</li>
<li>Add in your seasonings (garlic salt, garlic powder, italian seasoning, fennel, salt & pepper).</li>
<li>Bring your sauce to a boil and simmer for 5 minutes.</li>
<li>Pour in 1 1/2 cups meat sauce in 9x13 inch baking dish</li>
<li>Add in half the pasta as a layer</li>
<li>Layer 2 cups mozzarella then all parmesan cheese</li>
<li>Layer 2 cups sauce, then remaining pasta, then all but 1/2 cup of mozzarella.</li>
<li>Top with remaining sauce</li>
<li>Add just a few more pinches of mozzarella for the finishing touch</li>
<li>Bake for 30-45 minutes or until hot and bubbly</li>

It's been a long weekend, and all I want to do is curl up on my couch with a warm bowl of chili and a good movie. After googling slow-cooker recipes for quite some time, I came up with this amazing colorful chili by <a href="http://allrecipes.com/recipe/lauras-quick-slow-cooker-turkey-chili/detail.aspx">Laura</a> (slightly tweeked to my liking). The hubby was home sick with a sore throat all last week, so I thought I'd make the extra effort and make him some homemade chicken noodle soup. After the first bite, he looked over at me adoringly and said, "I remember why I married you." Ha ha!<br />
What's better than chicken noodle soup on the first snowy day of the year? Eating it with someone who loves you <em>and</em> your mad cooking skills. <br />

Ingredients:<br />

<li>1 tablespoon butter</li>
<li>1/2 cup chopped onion</li>
<li>1/2 cup chopped celery</li>
<li>4 (14.5 ounce) cans chicken broth (or 6 cups of water and 5 chicken boullion cubes)</li>
<li>1/2 pound chopped cooked chicken breast</li>
<li>1 1/2 cups egg noodles (I used macaroni noodles, cause that's all I had)</li>
<li>1 cup sliced carrots</li>
<li>1/2 teaspoon dried basil</li>
<li>1/2 teaspoon dried oregano</li>
<li>salt and pepper to taste</li>
</ul>
Directions:<br />
<ol style="text-align: left;">
<li>Bring a small pot of water to a boil, and pre-cook your noodles until <em>almost</em> al dente.</li>
<li>In a large pot over medium heat, melt butter. </li>
<li>Cook onion, celery and carrots in butter until just tender, 5 minutes. </li>
<li>Pour in chicken and vegetable broths and stir in chicken, carrots, basil, oregano, salt and pepper. </li>
<li>Bring to a boil, then reduce heat and simmer 15 minutes.</li>
<li>Add in your noodles to soak up some flavor, simmer for 5 more minutes, then serve. </li>

I make him an incredibly awesome home cooked meal, complete with <a href="http://starvingstudentrecipes.blogspot.com/2011/08/fried-wontons.html">fried wontons</a> and rice. Let's just say it got very quiet when dinner started, because everyone was busy eating instead of talking. I got two very big thumbs up.<br />

Ingredients:<br />
<em>Chicken:</em><br />
<ul>
<li>3-4 boneless, skinless chicken breasts, cut into bite sized chunks</li>
<li>Salt and pepper</li>
<li>1 cup cornstarch</li>
<li>2 eggs, beaten</li>
<li>1/4 cup canola oil</li>
</ul>
<em>Sauce:</em><br />
<ul>
<li>3/4 cup sugar</li>
<li>4 tbsp ketchup</li>
<li>1/2 cup vinegar</li>
<li>1 tbsp soy sauce</li>
<li>1 tsp garlic salt</li>
</ul>
Directions:<br />
<ol>
<li>Season the chicken chunks with salt and pepper</li>
<li>Dip chicken in cornstarch and then in egg. Fry in a little oil until brown, but not cooked through.</li>
<li>Place in a single layer in a baking dish.</li>
<li>Boil sauce ingredients together, then pour over chicken.</li>
<li>Bake for one hour at 325 degrees F. Mix chicken every 15 minutes.</li>
<li>Serve over rice.</li>

I got this recipe a long time ago from my very health-conscious sister. I don't make it often, but when I do, I remember why I saved it for so long! It's not quite a chili, but not quite a casserole.. I'm not sure what to call it, besides spicy and delicious!<br />

Ingredients:<br />

<li>1 tbsp veggie oil</li>
<li>2 cups red onion, chopped</li>
<li>6 garlic cloves, minced</li>
<li>4 raw jalepeno peppers, minced </li>
<li>2 cups red bell peppers, chopped</li>
<li>1 tbsp cumin</li>
<li>1 1/4 cups tomato sauce</li>
<li>1 tbsp honey</li>
<li>1 tbsp molasses</li>
<li>2 tbsp Dijon mustard</li>
<li>1 15oz can Pinto beans</li>
<li>1 15oz can Great Northern beans</li>
</ul>
Directions:<br />
<ol>
<li>Chop up all your vegetables.</li>
<li>Heat a heavy pot or deep skillet and add oil.</li>
<li>Sautee onions to your liking.</li>
<li>Add garlic, jalepenos, bell pepper and cumin, and sautee for a few more minutes.</li>
<li>Stir in tomato sauce, honey, molasses, mustard and all beans.</li>
<li>Re-season as needed.</li>
<li>Pour mixture in oven-safe dish and bake uncovered for at least 30 minutes. The longer you cook it, the more the beans will "set up" as the liquid is driven into the beans.</li>
