Spanish Rice


Pair this with a couple of tacos and call it a perfect meal.  Let's be honest: This stuff makes me drool. 
Ingredients:
  • 1 tablespoon vegetable oil
  • 1 1/2 cups instant rice1
  • 1 onion, chopped
  • 1 red bell pepper, chopped
  • 1/2 green bell pepper, chopped
  • 1 teaspoon prepared mustard
  • 1/2 teaspoon salt
  • 1 1/2 (14.5 ounce) cans diced tomatoes
  • 1/2 can tomato soup
  • 1/2 can water
Directions:
  1. In a large saucepan over medium heat combine oil, uncooked rice, onion, red bell pepper and green bell pepper. Sautee until onions are translucent. Stir in mustard, salt, tomatoes and tomato juice; simmer for 8 minutes, or until rice has completely cooked.
