Spicy Cheese and Sausage Dip

Got this recipe from a family friend, and fell in love. I will admit, it's better with regular breakfast sausage, but I've recently made it with turkey sausage and it still tastes pretty good.
And, like most of my recipes, it's easy... Great for your next frat party :)
If you want something less spicy, use regular diced tomatoes, regular Velveeta cheese, and breakfast sausage... Though I will warn you it won't be as highly addictive.
Makes about 5 cups

Ingredients
  • 1 small box Mexican Velveeta cheese
  • 1 package uncooked breakfast sausage (the kind without the skin)
  • 1 can Rotel (found in the diced tomatoes section)

It's also nice to use a crock pot so you can serve it warm at a party, but you could also probably do it in a regular medium-sized pot on the stove.
Directions
  • Cut up the velveeta cheese into 1-inch cubes (it melts faster that way), and throw them in the crock pot
  • Pour the can of Rotel in with the cheese.
  • Cook up your breakfast sausage just like you would cook ground beef.
  • Add the sausage to the cheesy tomato-ey mixture
  • Turn the crock pot to HOT and allow to warm, stirring occasionally.
  • -If you're using a regular pot on the stove, use LOW heat or it will burn. Stir it often.
  • Serve with tortilla chips (I like Tostitos Scoops).
